Like any good cookbook that references a specific regional cuisine, it's often necessary to explain a bit about what you are going to need to make the dishes.  So, here are some pages putting names to different land divisions and layers and what they mean genealogically speaking.  Be sure to check out my Rules page too as it might help to explain some of the more curious geographical quirks that might thwart your research.
